Chicken and Artichoke Salad Italian Blend


  • 1-5 oz. pkg. EarthGreens® Italian Blend
  • 1/3 cup Red onion, chopped
  • ¼ lb. Chicken, cooked and cut into cubes
  • 1-4 oz. jar Pimientos, drained sliced
  • 1-15 oz. can Artichoke hearts, drained and chopped
  • ½ cup Parmesan cheese, grated
  • ¼ cup Olive oil
  • 3 Tbsp. Red wine vinegar
  • ½ tsp. Sea salt
  • ¼ tsp. Coarsely ground black pepper


In a small bowl, whisk together vinegar, olive oil, salt, pepper, and Parmesan cheese; set aside.

In a large salad bowl, toss EarthGreens® Italian Blend, chicken, pimientos, onion and artichoke hearts. Add dressing and toss thoroughly. Makes 6 servings.
