Chicken and Artichoke Salad Italian Blend
- 1-5 oz. pkg. EarthGreens® Italian Blend
- 1/3 cup Red onion, chopped
- ¼ lb. Chicken, cooked and cut into cubes
- 1-4 oz. jar Pimientos, drained sliced
- 1-15 oz. can Artichoke hearts, drained and chopped
- ½ cup Parmesan cheese, grated
- ¼ cup Olive oil
- 3 Tbsp. Red wine vinegar
- ½ tsp. Sea salt
- ¼ tsp. Coarsely ground black pepper
In a small bowl, whisk together vinegar, olive oil, salt, pepper, and Parmesan cheese; set aside.
In a large salad bowl, toss EarthGreens® Italian Blend, chicken, pimientos, onion and artichoke hearts. Add dressing and toss thoroughly. Makes 6 servings.
