Chicken Salad Sandwiches
- 1-7 oz. pkg. Garden Life™ Green Leaf Lettuce
- 3 cups Chicken breast, cooked and cubed
- 1 tsp. Garlic, minced
- 1 tsp. Tarragon
- 1/3 cup Celery, chopped
- 2 Tbsp. Green onion, finely chopped
- ½ cup Grapes, sliced in half
- 2 Tbsp. Mayonnaise, low fat
- 1 loaf Wheat bread
In a large bowl, mix cubed chicken, garlic, tarragon, celery, green onion, grapes, and mayonnaise until evenly coated.
Layer bread with Garden Life™ Green Leaf lettuce, spread chicken salad mixture on top; serve. For a healthier option, spread chicken mixture directly onto green leaf; wrap and eat. Makes: 6-8 servings.
