Crunchy Rustic Arugula Salad


  • 1-5 oz. pkg. EarthGreens® Arugula
  • 1 cup Mozzarella, thinly sliced
  • 1 lg Tomato, sliced
  • ¼ cup Walnuts, halved, toasted
  • To taste Sea salt
  • To taste Coarsely ground black pepper


  • 2 Tbsp. Extra virgin olive oil
  • 2 Tbsp. Walnut oil (optional)
  • 1 Tbsp. Balsamic vinegar


In a medium size bowl, whisk together, olive oil, balsamic vinegar and walnut oil (if optioned). Season with salt and pepper. Arrange EarthGreens® Arugula on a platter or individual salad plates. Place sliced tomatoes on top of Arugula; overlap with mozzarella slices. Drizzle salad with dressing and garnish with walnuts. Makes 4 servings
