Spinach Deviled Eggs


  • 4 cups EarthGreens® Baby Spinach, cooked and squeezed dry
  • 12 Hard-boiled eggs, peeled
  • 1/4 cup Mayonnaise
  • 2 Tbsp. Green onion, finely chopped
  • 2 Tbsp. Butter or margarine, softened
  • 1/2 tsp Coarsely ground pepper
  • 1/4 tsp. Sea salt
  • 4 Bacon strips, cooked and crumbled
  • 1 dash Paprika


Slice eggs in half lengthwise; place yolks in a small bowl. Using a fork, stir in the mayonnaise, butter, onion, pepper and salt. Add spinach, bacon and mix well. Spoon into egg whites and sprinkle with paprika. Serve immediately. Makes 24 appetizers
