Tacos A La’ Cosmo
- 1-7 oz. pkg. Garden Life™ Cosmopolitan Lettuce Leaves
- 2 lbs. Ground turkey
- ½ cup Onion, finely chopped
- 1 cup Fresh tomato, chopped
- 2 Tbsp. Paprika
- 1 tsp. Garlic, minced
- 1 doz. Corn tortilla
- 2 Tbsp. Corn oil
In a large nonstick skillet, add ground turkey, paprika, garlic and onion; brown 10-15 minutes longer or until meat is no longer pink. Drain and set aside. Chop 6 Cosmopolitan leaves and set aside.
In a large skillet add oil and place tortilla in oil; turn once. Using the spatula, fold in half to create a taco shell; continue cooking until both sides are golden crisp. Remove from pan and place on top of paper towel to remove excess oil. Let cool.
Open taco, place meat mixture inside and top with chopped Cosmo and tomato.
For a healthier option: Layer Garden Life™ Cosmopolitan leaves in a large platter. Spoon taco mixture into Cosmopolitan leaf lettuce; sprinkle with chopped Cosmo and tomato. Makes: 6-8 servings.
